A room worth working in.
One hundred and twenty seats under the arched windows of an 1872 church, a bar on the lounge level, and private dining that runs to two hundred and fifty. Busy weekends, real volume, and a building people travel to sit in.
We hire for temperament first. Most of the rest can be taught, and we would rather train someone who looks after a table properly than undo habits picked up elsewhere. If you have done this a long time you will find a room that rewards it. If you are starting out, say so on the form.
