Director of Operations

Chris' path to the restaurant industry is a diverse one. From a Navy federal police officer to a trade broker in New York, to the GM of a high-end steakhouse - he first approached the restaurant industry as a sommelier, then a private events booker in the New York City steakhouse scene. Eventually, he operated his own establishment, Ursino Steakhouse, and Tavern, which he sold in 2021. Today, Chris deftly pilots Oldestone, one of the finest steakhouses and culinary experiences in the renowned New Hope region.

Will

Culinary Director

Culinary Director Chef Will cut his teeth in Chesapeake Bay restaurants as a teen, with stops at some of the most prestigious seafood, chophouses, and other fine dining establishments along the way. His southern steakhouse pedigree aligns perfectly with the 150-year-old building that houses Oldestone. Traditionally, the restaurant experience is one of comfort, continuity, nd the simpleness of a well-prepared meal - a constant in this building for the past few decades.

Tyler

Chef de Cuisine

Chef Tyler has been an important component of Chef Will's team going back to 2016, when both were running the kitchen at Ursino Steakhouse. More recently, Chef Tyler worked at the Vanguard and The Barrow House in New Jersey. His precise hands-on preparation and high-set standards elevate the kitchen staff to fulfilling Chef Will's traditional vision, each step of the way.
